Descripció del contingut i pla d'activitats:
Les empreses de tractament de suproductes animals, actualment, a
Barcelona i a altres grans ciutats metropolitanes, agafen un
paper molt destacat en la correcta gestió dels residus carnis de
supermercats i grans superfícies amb secció d¿alimentació.

Els residus càrnis d¿aquests establiments són un subproducte
d¿alt valor per a les plantes de tractament, que els transformen
en matèria primera per altres productes, com per exemple pinsos
per alimentació animal.

Aquestes empreses de tractament de suproductes però, d¿acord el
Reglament (CE) 1069/2009, han de disposar d¿un sistema
d¿anàlisis de perills i punt de control crític (APPCC), per
poder operar.

Overview (resum en anglès): Companies that treat SANDACH waste (Animal By-products Not Intended for Human Consumption), from slaughterhouses, cutting rooms, markets or butchers, among others, need to have written procedures in place for their operation, based on HACCP principles (Hazard Analysis and Critical Control Points) to be Authorized by the competent Administration and to be able to carry out its activity.
The development of the HACCP System is favoured and simplified with the establishment of prerequisites (cleaning and disinfection plan, pest control plan...), which are a series of working conditions that allow control of general hazards that affect the entire process. Regarding these prerequisites, although they are established separately from the HACCP Plan, their existence and effectiveness must be assessed during the design and implementation of the HACCP Plan, and must therefore be documented and verified on a regular basis together with the verification of the HACCP System.
So, in parallel with the preparation of the documentation for the HACCP implementation at SUBTRANS, SA, the prerequisite plan will also be developed.
The application of a HACCP to a company that deals with SANDACH requires knowledge of very specific regulations and the correct knowledge of all the company's processes to correctly identify what dangers there may be in each of them.
Following the guidelines for the application of a HACCP, in the company SUBSTRANS, SA, the first thing that has been done is to define the human team that will be part of the design and development of the entire HACCP. This team has described the company's production process step by step, from when the SANDACH waste comes in until the final products, flour and fat, raw material for the manufacture of feed for animal feed, come out. Based on this description, a flow diagram is drawn up with all the stages of the process which is checked and corrected "on site". For each stage of the process, it is analysed what type of danger there may be; biological, physical or chemical, whether it can be serious or not and what kind of preventive measures are applied to it. After determining what the serious hazards are, the HACCP team has determined which of these are Critical Control Points (CCPs) and has established, for each of them, critical limits, a monitoring system and corrective measures which must be applied in case of deviation from the critical limits.
All this analysis is reflected in written procedures for each of the stages of the process and procedures have also been drawn up to verify compliance with the first, in accordance with the application criteria of a HACCP.
And finally, five prerequisite plans applicable to the company SUBTRANS, SA have also been documented.
