Descripció del contingut i pla d'activitats:
La crioconcentració es una tècnica que permet la concentració
de productes líquids. Son destacables un baix requeriment
energètic i la preservació dels components volàtils. La
crioconcentració en bloc assistida per centrifugació es un
tècnica recent, encara en fase de laboratori. S'ha estudiat la
seva aplicació a diferents aliments, principalment sucs.
D'altra banda el suero de llet és un derivat de la indùstria
formatgera que de vegades es llença al corrent residual i es
perden components d'interès.
No es coneix la aplicació de la crioconcentració assistida per
centrifugació en el suero làctic. Aquest treball final de grau
proposa l'estudi de la crioconcentració assistida per
centrifugació com a tècnique per recuperar els components del
suero de llet.
Les activitats a dur a terme:
- caracterització del suero original i del concentrat
- determinar les condicions óptimes per la concentració per
centrifugació (velocitat i temps de centrifugació)
- estudiar la concentració límit que es pot assolir amb
aquesta tècnica

Overview (resum en anglès): Cryoconcentration is a technology that uses low temperatures to achieve high concentrations. It involves the separation of soluble solids from the aqueous phase by freezing the water. This allows to obtain a concentrate of high nutritional and organoleptic quality against evaporation and membrane technology. There are several cryoconcentration methodologies, but in this work, centrifugation has been applied as an assisted technique of block cryoconcentration to maximize the Concentration Index (IC) and the Soluble Solids Recovered (SSR) of unsalted whey.
An experimental design was carried out using the Response Surface Methodology (RSM) to study the effect of centrifugation factors, time and speed, on the IC and SSR response variables. This design was composed of 9 tests combining different times (20, 35 and 50 minutes) and speeds (1000, 2750 and 4500 rpm). The results concluded that the factors significantly influenced the IC and SSR response variables. The optimization of the system on both variables was also carried out. It was determined that the ideal conditions to obtain maximum SSR were at maximum speed and time (4500 rpm for 50 minutes) thus achieving a recovery of soluble solids greater than 70%. The best conditions for IC were 2130 rpm for 20 minutes, obtaining an IC of 6,7.
The samples that had given the maximum IC were analysed to know the behaviour of lactose; it was concluded that lactose tends to distribute towards the concentrated fraction since the ice acts as a porous solid through which the concentrate passes.
Finally, centrifuge assisted and vacuum assisted block cryoconcentration were compared. In conclusion, higher IC and SSR are achieved with the centrifuge method.
