En los últimos años, la aparición de micro-plásticos en alimentos que pueden ser perjudiciales para la salud humana. Por otro lado, la aparición de técnicas de análisis de los alimentos más precisas y con límites de detección más bajos, analizar unagran cantidad de elementos presetnes en los alimentos. En este contexto, el estudiante trabajará en un estudio centrado en el análisis de plastificantes en bebidas refrescantes azucaradas mediante el uso de técnicas de cromatografía liquida acoplada a espectrometría de masas de alta resolución (lc-hrms).

Con los resultados obtenidos se estimará el impacto de los plastificantes en la salud humana a través de la dieta.

Overview (resum en anglès): Plastics are composed of multiple chemical additives intended to improve their physical and functional properties, making them a versatile material suitable for use across a wide range of industrial sectors, such as food and beverage packaging. However, many of these organic compounds are being studied by the scientific community due to their potential negative impact on human health. Among the most relevant are organophosphate esters (OPEs), phthalates (PAEs), and non-phthalate plasticizers (NPPs), which are widely used for their ability to confer flexibility to plastic materials, among other properties. Since these additives are not covalently bonded to the polymer matrix, they can easily migrate into packaged foods, thereby increasing human exposure. Several studies have indicated that this exposure is associated with harmful health effects, including endocrine disruption and reproductive toxicity. In this context, the analysis of organic contaminants associated with plastic materials in commonly consumed products, such as soft drinks, becomes particularly important and constitutes the main objective of the present study.

This study focused on the identification and quantification of 11 PAEs, 20 OPEs, and 12 NPPs in various beverages purchased from different establishments in the city of Barcelona. For this purpose, a methodology based on turbulent flow chromatography (TFC), coupled to high-resolution liquid chromatography-mass spectrometry (LC-HRMS), was employed.

As a result of the analysis, 41 plasticizers were detected in the 43 samples analyzed, reaching levels of up to 1217.16 mg/L, demonstrating the ubiquity of these compounds in common consumer products. The presence of plastic additives in the food chain confirms continuous exposure to these contaminants, which in the long term could have consequences for human health.
