Descripció del contingut i pla d'activitats:
La normativa higiènic sanitària (R852/2004, R853/2004, R2074/2005 i RD640/2006) permeten la elaboració de formatges de llet crua a Espanya, prèvia sol·licitud a la autoritat competent. Degut a que aquesta activitat, pot comportar riscos sanitaris sinó es segueixen uns determinats criteris, aquest treball té com objectiu fer un manual pels formatgers artesans perquè tinguin les eines per elaborar formatges de llet crua de la manera més segura possible i a l’hora puguin donar explicacions basades en criteris científics a la inspecció sanitària.

El guió del treball seguirà el següent esquema:
1.Introducció on s’explicarà la legislació sota la qual s’empara l’elaboració de formatges de llet crua i es farà una revisió bibliogràfica sobre els treballs més recents sobre la llet crua i els formatges de llet crua.
2.El manual pròpiament dit on constaran els següents punts:
a.Com demanar l’excepció per elaborar formatges de llet crua i legislació a tenir en compte a Catalunya
b.Conceptes bàsics de microbiologia general i microbiologia de la llet
c.Pautes per formatges concrets basades en la “Guía de pràcticas correctas de Higiene para la elaboración de quesos y productos lácteos artesanos” de la organització “Red Europea de Queserías y Productores Lácteos de Campo y Artesanos” (FACEnetwork), explicant el perquè tècnic-científic de cada pauta.

Overview (resum en anglès): Nowadays, in Spain, at a state and regional level, the cheese makers community is made up of small artisanal productions. Often, these artisans do not have basic scientific knowledge, and they acquire it from trial and error. In Catalonia, these artisans produce more than 250 different varieties of cheese, creating a huge variety of products that are considered local gastronomic heritage. However, the sanitary authorities in the last years have changed their criteria regarding raw milk and raw milk cheese, stating that these cheeses can cause different zoonotic diseases. In this paper, we will do a bibliographic review about microbiology, raw milk, raw milk cheese, and its fabrication process. We will do an easy overview so that a basic knowledge of the previously stated areas can be acquired. The result of this bibliographic review has been acknowledging that the main factors in order to control the growth of the different microorganisms are the pH, temperature, and the activity of the water of the cheese. Also, which are the pathogens that present a higher risk and the ways to avoid its growth. Support for the European guide of good hygiene practices has been made, stating the pages of the guide you should consult in order to produce in a safe manner during all the different processes of raw cheese production.
The guide has been based on the cheese production process, pointing out all the aspects that the guide indicated. Adding information to the different aspects that are required. This support explains that following a good guideline during the production process, raw milk cheese can be produced in a safe and hygienic way. We have seen that the initial microbiota, and so the quality of the raw milk, is vital in order to be able to produce raw milk cheese safely. The milk contains molecules such as lactoferrin or the lactoperoxidase system that naturally protect milk from the growth of certain pathogens. In addition, we have elaborated a guideline to produce cheese of the Camembert type, as it represents the cheeses with higher risk. We also list the different legal permits required in order to produce raw milk cheese. With this paper, we have concluded that with a good education, the artisans should not have any problem producing raw milk cheese in a safe manner.
