Descripció del contingut i pla d'activitats:
L'objectiu d'aquest estudi és caracteritzar la cadena de valor de
la carxofa, enfocant-se sobretot en les carxofes que es descarten
durant tot el procés de la cadena, fent una estimació de les
pèrdues i el malbaratament alimentari que suposen. També
s'estudiaran les causes que provoquen aquestes pèrdues, així com
identificar possibles mesures pel seu aprofitament i valorització.
A més d'això, es farà una avaluació i econòmica.

Overview (resum en anglès): The main objective of this study is to quantify the losses and food waste that were generated in the artichoke food value chain during the 2019-2020 campaign in Catalonia, differentiating between the long chain and the short chain. The results of this study will make it possible to detect critical points and propose prevention and reduction actions for food loss and food waste. It will be analysed from when the artichoke is harvested in the fields, to wholesale at destination (large stores or central markets), social entities that distribute food free of charge are also included. To value the losses, an analysis of the economic impact at cost and production price of the artichoke has been carried out.
Two types of analysis have been carried out, one quantitative through a questionnaire and the other qualitative through interviews with actors in the sector and workshops. With the data obtained, it has been possible to make a characterization of the artichoke value chain, as well as the estimation of the number of losses and waste that are generated in each link of the chain.
The results show that during the 2019-2020 campaign, 692.5 tons of food losses and waste were generated in the artichoke value chain in Catalonia. Primary production is the stage with the highest contribution in food losses and waste with around 500 tons, equivalent to €2,521,440 economic losses at consumer price. Taking into account short-chain and long-chain commercialization, the last one is the one with the biggest impact in terms of food losses and waste (392 tons).
A large part of the losses generated have occurred due to the volatility of market prices and the short shelf life of the artichoke, which turns black around five days after being harvested. These causes can be prevented if the corresponding prevention and reduction actions are applied.
