Descripció del contingut i pla d'activitats:
L'objectiu d'aquest estudi és caracteritzar la cadena de valor
del tomàquet, enfocant-se sobretot en els tomàquets que es
descarten durant tot el procés de la cadena, fent una estimació
de les pèrdues i el malbaratament alimentari que suposen. També
s'estudiaran les causes que provoquen aquestes pèrdues, així com
identificar possibles mesures pel seu aprofitament i
valorització. A més d'això, es farà una avaluació econòmica.
Cal destacar, que la quantificació es farà a través d'un
qüestionari online dirigir las agents de cada esglaó de la
cadena de valor del tomàquet.

Overview (resum en anglès): Tomato is one of the most wasted foods along the value chain worldwide. Therefore, in order to reduce this phenomenon, it is imperative to analyse and define the impact generated by this phenomenon and the causes that generate it, so that different actions can be applied to prevent and reduce it.
The present work is part of a study led by the Centro de Investigación en Economía y Desarrollo Agroalimentario (CREDA), which aims to define the Catalan tomato value chain in terms of food losses and wastage by quantifying them. The study also aims to carry out an analysis of the possible causes and prevention actions to be applied against these phenomena. It also aims to define and quantify a series of indicators to analyze and monitor the evolution of the tomato value chain in terms of losses and food waste.
A mixed methodology has been used to carry out this study, employing both quantitative and qualitative methods of analysis. Two types of data have also been combined: primary data (generated by the study) and secondary data (existing). First, an analysis of secondary data on the tomato sector and food waste was carried out. Afterwards, semi-structured interviews have been carried out with key agents of the field and, subsequently, all the data obtained has been collected in order to elaborate a questionnaire addressed to the sector experts of each link of the Catalan salad tomato value chain. Finally, the results were contrasted by means of a participatory workshop with key actors in the industry.
The present study concluded that about one third (32.73%) of the total production of salad tomatoes resulted in food loss or wastage in 2020. The wholesale trade stage at destination in central markets was the link with the highest generation of wastage in terms of tons. However, the wholesale trade stage at origin was the stage with the highest generation of wastage at the internal level, as losses corresponded to 9.21% of the link's entries.
