Descripció del contingut i pla d'activitats:
El passat 1 de febrer es va inaugurar el nou centre
d¿aprofitament alimentari, denominat Foodback. Aquest nou sistema
de gestió de matèria orgànica vegetal és pioner respecte la
gestió d¿excedents dels mercats de majoristes d¿España.
L¿objectiu és aprofitar al màxim tots els recursos dels que
disposem, donant-li una segona oportunitat a les fruites i
hortalisses aportades per els operadors de Mercabarna. És per
això, que aquest treball pretén investigar la possibilitat de
desenvolupar un obrador per a transformar les fruites i
hortalisses en conserves tradicionals que no necessiten
tecnologia sofisticada i permeten allargar la vida útil de la
matèria primera.
A partir de les dades de quantificació del malbaratament de
fruites i verdures a Mercabarna, s'estableix una capacitat de
producció estimada inicialment en 500 kg/dia. Es definiran les
possibles tecnologies d'aprofitament, de les quals es
seleccionarà una. A partir d'aquí es proposen els equips i
serveis necessaris i es dissenya la proposta de distribució en
planta (layout). Finalment cal fer una estimació del cost
econòmic.

Overview (resum en anglès): This Final Degree Project is a project in which plant distribution is carried out and
the different installations (lighting, electricity, fire protection) of an industry dedicated to the
drying of class 2 fruits and vegetables (product that once processed can be marketed) from
the Foodback (Mercabarna¿s food utilization center). The products that are produced are
variable, depending among others on seasonality and the reception of fruit and vegetables at
the establishment. This industry is located in Mercabarna, Barcelona, specifically inside the
warehouse from Foodback.
The project contains all the necessary data for the implementation of this industry. First,
depending on the quantities and the production process, the selection of the equipment and
the layout is made to allow the planned process to be carried out. After the distribution of
the workroom, the calculation and design of the electrical installation and fire protection
measures are carried out, following current regulations. An estimate is also made of the
energy cost that the operation of this industry will have, taking as an example 3 different
products (pineapple, mango and tomato) based on waste data quantified in a study carried
out by CREDA in 2021. Finally, budgets are drawn up to find out the construction cost of
adapting the new distribution inside the wareroom as well as the different elements that
make up the designed facilities and the machinery necessary for the implementation of the
drying workshop.
The project contains the plans that depict the different distributions and installations in order
to make the project more visual and thus facilitate the correct installation for the
professionals who execute it.
The work consists of three documents: Report and Annexes for calculations and explanations,
plans and budget.
