Descripció del contingut i pla d'activitats:
Esta propuesta de trabajo comprende dos fases diferentes. En una
primera fase se realizará un estudio del mercado actual de las
bebidas vegetales, con el objetivo de obtener información sobre
este segmento (productos disponibles, estrategias de marketing,
composición, preferencias de consumo, establecimientos en los
cuales se comercializan, público target, etc.). Se realizará un
estudio estadístico para procesar los datos generados. En una
segunda fase, se seleccionarán diferentes licuados del mercado y
se realizará un estudio de los factores que pueden afectar a su
estabilidad (formulación, procesado, etc.), así como se contempla
la opción de realizar una caracterización fisicoquímica y
organoléptica de los mismos productos en los laboratorios del
DEAB.

Overview (resum en anglès): The rise of plant-based beverages in recent years has been driven by current trends, such as consuming plant-based products, environmental commitment or ethics for animal welfare.

In order to know the details about the current situation of these products in the market, a study is carried out through which the existence of more than 200 vegetable drinks available on the shelves is perceived, made out of over 14 different raw materials. However, despite the high number of references found, the quantity of companies which elaborate these products is very reduced, amounting to a total of 28 manufacturers, among which we find national and foreign companies (N = 6), which distribute their products in our country.

Regarding the characteristics of the vegetable drinks analysed, we find that 46 % are organic; 27 % contain no additives and another 27 % contain added sugars. Moreover, 39 % and 30 % of the studied products contain added calcium and vitamins respectively, with the aim of improving their nutritional value.

Taking into account this variety of plant-based beverages available, it has been attempted to study what are the characteristics that are considered as most important to a determined group of consumers are, by means of a sensory analysis test. Thus, no specific attribute that affects each group of consumer¿s preferences is found, but this depends on the vegetable drink as the existing differences between the samples that were presented. It is also observed that the tasters are not able to know the raw materials of the plant-based beverages that are shown to them in the blind tasting, having less than 35 % of successes in recognising them.

Finally, 58 % of the participants is inclined towards almond drink as their preferred choices, a fact that does not concord with their initial preferences, as first, they indicated oat as their favourite beverage, with 34 % of the votes.
