This project aims to quantify food waste (FW) generated in a food
distribution center and identify the most relevant causes. The
first step of this project will consist of a review of the
literature on FW, especially that focused on the distribution
stage. In the second step, the FW measurement method will be
developed. In the third step, quantification of FW in the food
distribution center will be conducted. In the fourth step, a set of
FW indicators will be established and estimated. Finally, a set of
recommendations aimed to reduce or valorize the generated FW will
be established.
