Descripció del contingut i pla d'activitats:
Aquest treball s'enmarca en un projecte de l'empresa on estan documentant totes les possibles matèries primeres i el pla de traçabilitat dels productes elaborats.
En el TFG es farà un recull de la legislació aplicable i s'establiran els protocols de comunicació externa i interna per assegurar la traçabilitat i validació de la producció de les diferents famílies de productes ecològics d'acord amb la normativa vigent.
De forma paral·lela es dissenyaran i es posaran en marxa els registres necessaris per documentar totes les etapes: gestió de proveïdors i procés d'elaboració.
El treball respondrà la problemàtica real de l'empresa en l'adaptació a l'elaboració d'aquest tipus de productes

Overview (resum en anglès): Concern about food waste and its effects is increasing, both for consumers and for companies. At present, awareness initiatives aimed at reducing losses throughout the supply chain, promoting more sustainable and responsible practices in the food sector, have gained importance.

This Final Degree Project aims to detect the critical points of generating losses within the production process of a food industry. For this, an analysis has been carried out based on the production data corresponding to the year 2024.

This study has been structured in three different parts. First, the production process has been known and those critical points where greater losses or losses are generated have been identified. Secondly, an analysis of the data collected throughout the year has been carried out according to the production line and has been classified according to the type of incident; mechanical, product typology, planning or human error. Finally, several improvement measures have been proposed aimed at reducing these losses and optimizing the efficiency of the production process.

As a conclusion, it has been identified that the most common errors for the generation of the losses are mainly related to planning failures and human errors. Although some improvements have already been implemented in the process, it is stressed that it is a process of continuous improvement. Therefore, the reduction of losses must be addressed as a constant effort that requires monitoring, periodic review and adaptation to changes in the productive environment.
