Descripció del contingut i pla d'activitats:

Overview (resum en anglès): Currently, there is a tendency to extend the shelf life of vegetables and maintain their initial quality for a longer period of time. Both of these factors are affected by ethylene, which can cause unwanted changes in the appearance, texture and taste of fruits and vegetables. To avoid this, ethylene scavengers are used.
The objective of this study is to evaluate the efficiency of ethylene scavengers made by Bioconservación S.A. (based on KMnO4) in two systems, one integrated in refrigerators and the other in reusable containers. To do so, quality parameters were studied in climacteric fruits, non-climacteric fruits and vegetables. These parameters were: appearance and loss of weight in both systems, and firmness, total soluble solids and pH in the integrated system in refrigerators.
The results obtained indicate that, in both systems, the fruits and vegetables stored with the ethylene scavenger extended their shelf life and reduced their loss of quality. In all of the vegetables, the weight loss was higher in those that were not stored with the scavenger. Similar results were found for the loss of firmness. Regarding the appearance, the presence of the scavenger does not provide a significant improvement in the climacteric fruits along time in both systems. In non-climacteric fruits and vegetables, relevant results were obtained, increasing their shelf life by 4 to 10 days, depending on the vegetable. Even though the results of both systems with the scavenger were satisfactory, the reusable container system presented more efficiency, extending the shelf life of vegetables for a longer period of time.
