Descripció del contingut i pla d'activitats:
En este TFG se desarrollará zumo de verduras para niños utilizando la técnica cold press. Se busca crear un producto a base de los prductos identicados del mercado, desde los ingredientes del zumo hasta el diseño del envase. El diseño incluye realizar un producto atractivo para el target infantil y a su vez que sea nutritivo y saludable. En este sentido se realizarán diversos análisis para estudiar las características químicas del producto final y la aceptación sensorial.
aproximadamente 60 niños de un colegio local de castelldefels será el obetivo del estudio realizando catas en diversas sesiones. En la primera se buscará saber el grado de conocimiento de este tipo de productos y su aceptación, la segunda se determinará si el producto diseñado por el estudiante tiene una buena aceptación por el público al que va dirigido, posteriormente se hará una serie de recomendaciones para su producción en un mercado real.

Nowadays on the juice¿s market there is a different type of juices formed by fruit juices, fruit juices based on a concentrate and fruit nectar, which are suitable for adults and children consumption. The appearance of a new range of fruit juices called Cold Press, helps the introduction of vegetables into the world of juice¿s market, broadening the variety of flavours and new mixtures. Additionally, this new range of juice maintains most of the nutrients, vitamins and enzymes of fruit and vegetables. For this reason, a trend of using this new method of producing vegetables juices is rising among the sector¿s companies.
This Project aims to develop a juice, which contains fruits and vegetables, using the Cold Press extraction method and which will be directed towards children under 12 years old. In order to develop the juice, a preliminary study of the product will be conducted and the production process will be studied as well. Finally, pH, Brix degrees and acidity tests will be carried out to gain knowledge about the product and to determinate if the juice complies with the regulations of juice production established by the European Union.
The devolved juice is made by apple, pineapple, cucumber, spinach and mint, and to measure the acceptance of the designed product, a survey was be conducted, which will be directed towards parents with children under 12 years old. Besides evaluating the acceptability of the product, the survey will be also gather information about the consumption juices. In particular, it will ask which are the most liked fruit and vegetables juices and how packaging and Price impacts on the acceptability of the juice.
The results obtained from the survey show that 74,8% of children consume fruit juices. Also, we can conclude that the most consumed juice is fruit juice squeezed at home or in the supermarket. The outcome related to the designed juice shows very positive results, as it has obtained 54% acceptance among the survey respondents. Regarding the price, the results obtained are somehow discouraging because only 18% of those surveyed would be willing to pay the market price of the juice.
